As caterers, reaching July means that we are in full swing. From our Surrey kitchen, we’re fortunate enough to work with some of the finest produce available. Using seasonal ingredients, we love creating delicious, hearty food for our clients, but we also want to share our knowledge with you. Read on to discover our favourite ingredients for the month of July!
Samphire:
Make the most of Samphire between July-August. With a crisp and salty taste, somewhat similar to asparagus, blanching this marine vegetable is the perfect way to spruce up a fresh fish dish. Struggling for inspiration? Below is our beautiful sea bream, in a brown butter and cockle sauce topped with vibrant samphire. We served this at one of our Surrey weddings recently, and it's safe to say it went down a storm!
Tomatoes:
Obviously, our favourite thing about Summer is catering for so many events, but the next best thing has to be tomato season. We use these delectable morsels in many dishes, however making bruschetta allows the tomato to shine. Simply mix together tomatoes, red onion, garlic, basil, some balsamic vinegar and a healthy glug of extra virgin olive oil, season up, and you have yourself a crowd-pleasing summer canape!
Lamb:
During July, the very best British raised lamb is hitting its peak. We find that during our busy summer months, our lamb dishes are the most requested. Below is what might be my favourite of all dishes we produce at Tandem: slow cooked lamb shoulder garnished with pomegranate, then served with baba ghanoush, Mediterranean flatbreads and seasonal vegetables. This one’s perfect for the summer nights when a traditional roast just doesn’t feel right.
